.: Recipe : Carrot Walnut Cake with Cream Cheese Topping :.

Carrot Cake:
250 gram self-raising flour
250 gram butter
230 gram soft brown sugar
4 large eggs
2 carrots, finely grated
Juice & zest from one lemon
1 teaspoon cinnamon powder
1 tablespoon of vanilla essence
Handful of walnut (roasted)

Preheat oven to 180 degrees celcius. Mix the butter and sugar till fluffy. Add in eggs and flour, continue to mix. Add vanilla essence, carrots, lemon, cinnamon power and walnut and mix in. Pour into baking tin and bake for about 50 mins to an hour.

Cream Cheese Frosting:
115 grams cream cheese
115 grams of butter
200 grams of icing sugar (adjust according to desire sweetness)
1 1/2 tablespoon of lemon juice
1 teaspoon of vanilla essence

Carrot cake - ♥ ♥ ♥ ♥ ♥ ♥ ♥ ♥ (8/10)

Comments: I find the carrot cake texture really moist and good, but a lil bit too 'buttery'. Wonder if there could be improvement made so that cake remains moist, but less 'buttery'?
Also, would prefer more walnut, coz I just love the cake to be more crunchier!
But other than that, I love that it is not too sweet (I think brown sugar does the trick) and I just love how just one small teaspoon of cinnamon powder makes a difference.

Cream Cheese Frosting - ♥ ♥ ♥ ♥ ♥ ♥ (6/10)

Comments: Frosting is quite sweet, but compliments nicely with carrot cake. Just feels that the overall texture of the cream can be improved, perhaps remove butter altogether?

Overall conclusion : Aunty Wendy is going to pass me her version of carrot cake. Will try that out and compare to this one! :)
