Never knew it could be so difficult to get a recipe for chocolate cupcakes. I mean there are aplenty available on the internet, but after glimpsing thru each of them; they just didn’t seem right – either the proportioned looked wrong or the ingredients doesn’t gel.
So I googled “Kuali” and this Chocolate Chip Cupcake recipe by Amy Beh popped out. Reading the ingredients, it sounded pretty much about right, I proceed to match two batch of these (with slight modification of course!). This recipe is definitely a keeper, John’s colleague thought it was (and I quote) “NICEEEEE!!!!!!” and also said I was an “excellent baker”! *blush*

Amy Beh : Chocolate Chip Cupcake recipe (yields 12 regular sized cupcakes!)
o 120g butter (room temperature)
o 120g brown sugar
o 1/8 tsp salt
o 1 tsp chocolate essence
o ½ tsp vanilla essence
o 2 eggs (grade A)
o 145g superfine flour, sifted
o 1½ tsp baking powder, sifted
o 3/4 tsp bicarbonate of soda
o 20g cocoa powder
o 60ml UHT milk
o 100g semi sweet chocolate chips
o ½ tsp cinnamon powder
Preheat oven at 180°C. Cream butter, castor sugar, chocolate and vanilla essences and salt until light and fluffy. Add eggs, one at a time, beating well after each addition. In a small bowl, mix milk and cocoa powder until well blended and smooth. Sift flour, baking powder, cinnamon powder and bicarbonate of soda into creamed mixture. Stir well to mix. Add in cocoa milk mixture into creamed mixture. Add chocolate chips to combine. Place paper cups in a patty tin. Spoon batter into paper cups to 3/4 full. Bake in preheated over for 15-20 minutes or until capcakes are done.
